As the hot weather rolls around, we are all anxious to go swimming, get out in the sun, get our tan on, and yes! Eat those delicious frozen treats we all love on those hot summer days! Our amazing ambassador, EMILY, was so kind to share this fun, delicious recipe with us using our FIt Butters. Cookie Dough and Brown Batter Protein Ice Cream Sandwiches? YUM! We all crave those sweet, frozen treats. We all don't want to cheat on our diets or skip out on our summer bods to enjoy these! This is a creative, healthier option to curve those sweet cravings! FIt Butters Cookie Dough and Brownie Batter Protein Ice Cream Sandwich
Add water slowly, 1 tbsp at a time until the consistency is like a thick dough or cookie dough. *if you add too quickly this will become very runny*
Spray a tupperware or mold with cooking or baking spray.
Flatten your cookie dough layer and spread evenly using a spatula, or spoon. *tip: spray the spoon/spatula also so the dough does not stick to it*
Place in the freezer while you prepare the Ice Cream Layer.
Prepare your Ice Cream Layer
Add 25 g of the vanilla whey, with 75 g vanilla greek yogurt and 75 g lite cool whip.
Blend together until smooth using a whisk.
Pour over the cookie dough layer and spread evenly.
Place back in the freezer while you prepare the Brownie Layer
Prepare the Brownie Batter Layer
Combine the Peanut Butter Cup Plant and Whey protein powders with the powdered peanut butter and 40 g of Fit Butters Cookie Dough Cashew Butter Blend
Add water slowly, one tbsp at a time until the mixture reaches a thick batter consistency like a cookie dough thickness.
You may need to wait about 30-60 minutes for your initial cookie dough and ice cream layers to become firm before topping OR using the lid of your mold- you can flatten your brownie batter layer to match the size and place it over top of the ice cream layer.
Once you have added the brownie batter layer, allow to set freeze for about 1 hour
Put It All Together
Pop the entire thing out of the tupperware or mold by inverting onto a cutting board or cookie sheet.
Weigh the entire thing and divide the entire weight by desired serving size (the calories above calculate for 8 servings)
Cut into proportional individual sandwiches on the cutting board based on size or weight.
Store in the freezer for up to 2 weeks!
