These bars come together with pantry staples and a few special ingredients like vegan protein powder and dairy-free white chocolate chips. The combination of pumpkin pie spice and our Pumpkin Pie Fit Butters gives them that rich, warm, cozy flavor that’s synonymous with fall.
½ cup of dairy-free white chocolate chips, melted (we used Enjoy Life brand)
Directions
Mix the Dry Ingredients: Combine oats, protein powder, baking powder, baking soda, salt, and pumpkin pie spice in a medium-sized bowl.
Mix the Wet Ingredients: In a separate large bowl, whisk together maple syrup, pumpkin puree, and cashew milk.
Combine Wet and Dry Ingredients: Slowly stir the dry ingredients into the wet ingredients until just combined.
Bake: Pour the batter into a parchment-lined or greased baking dish and sprinkle a few dark chocolate chips on top if desired. Bake at 350°F for about 20 minutes, or until a toothpick comes out clean.
Make the Frosting: Melt the dairy-free white chocolate chips in 30-second intervals, stirring in between until smooth. Stir in the Pumpkin Pie Fit Butters until the mixture is creamy. Spread the frosting over the cooled bars.
