Directions
- Combine the Dry Ingredients: In a mixing bowl, add the Italian Rainbow Cookie cashew butter, almond flour, protein powder, maple syrup (or honey), and almond extract. Stir everything together until fully combined. If the dough feels too dry, add a tablespoon or two of milk or almond milk to help achieve the desired consistency.
- Fold in the Chocolate Chips: If you’re using mini dark chocolate chips, fold them into the dough. The chips add a bit of extra sweetness and texture, but feel free to skip them if you prefer a more straightforward flavor.
- Roll into Balls: Carefully roll the dough into 10-11 energy balls. If you want them to be perfectly round, lightly wet your hands or use a cookie scoop for uniform sizes.
- Melt the Dark Chocolate: In a microwave-safe bowl, melt the dark chocolate with a tiny bit of coconut oil to help it drizzle better. Microwave in 30-second intervals, stirring in between, until smooth and melted.
- Drizzle the Chocolate: Using a spoon or fork, drizzle the melted dark chocolate over the energy balls. Let them set for a few minutes to allow the chocolate to harden.
- Chill and Enjoy: Place the energy balls in the fridge for about 30 minutes to firm up and enjoy your delicious, protein-packed treat!
