A perfect protein vegan donut recipe for the holiday season with a holiday favorite flavor, Gingerbread! Tell me though, who doesn't love donuts? If you love Gingerbread and love donuts? This recipe is a must try for you! It is also vegan, and low calorie.
½ cup Ghost Gingerbread Vegan Protein Powder,45g
⅓ cup Almond Flour
¼ cup Zero Calorie Sugar Replacement,48g
¼ cup Peanut Butter Powder,24g
½ tsp Baking Soda
1 cup Non-fat Greek Yogurt,225g
½ cup Unsweetened Almond Milk,80ml
2 Tbsp Cinnamon Sugar Cookie FIt Butters
1 scoop vanilla protein
2 tbsp almond milk
1 tbsp Greek yogurt
1 tbsp zero calorie sweetener
Preheat oven to 350°F and spray donut tray with cooking spray.
In a bowl, whisk protein powder, Almond Flour baking flour, zero calorie sugar replacement, peanut butter powder and baking soda.
In a large bowl, whisk together Greek yogurt and almond milk.
Add dry mix to wet, and gently fold until combined. DO NOT OVER-MIX or protein powder will make the donuts gummy.
Add in the FIt Butters and fold.
Batter should be slightly thick.
Separate with large tablespoon for each donut, do not fill to top
Mix 1 tbsp Zero Calorie Sugar with ¼ tbsp cinnamon. Top donuts with cinnamon and sugar mixture (1:4 ratio)
Bake for 15-20 minutes or until the top is set. Toothpick inserted into the donut should come out mostly dry.
Remove from oven and flip donuts on to cooling rack.
While the Protein Donuts are cooking in the oven, add all ingredients for icing in a bowl and mix until smooth.
Add the icing on top of donuts, best when still slighty warm for icing to melt onto donuts.
